This is my simplified version of Haitian black beans & brown rice. My haitian sistahs will understand why I say it's simplified. This adaptation is still very good. I ate it with sliced avocadoes/tomatoes and a vinegarette I made up.
1 1/2 cup dried black beans soaked overnight (or 15.5 oz can of black beans)
1/2 shallot, chopped
1/4 red onion, chopped
1 scallions, chopped
1 cloves garlic, minced
2 tablespoons olive oil
1 cups brown rice
UPDATE: 1/2 cup coconut milk (optional)***
sea salt and pepper, to taste
1 bay leaves
1/8 teaspoon ground cloves
1 large sprigs fresh parsley
2 sprigs fresh thyme
1 scotch bonnet pepper (optional)
Directions:
In a pot, bring beans to boil in 4-5 cups of water. Lower the heat, cover pot, and simmer for about 45 minutes or until they are tender. Drain beans, reserving liquid.
In a pot, heat the oil at medium temperature and then add shallots, onions, scallions and garlic. Saute for about 2 minutes. Add rice and cook for another 2-3 minutes. Stir in beans and measure 3 cups of the reserved cooking liquid and coconut milk. Add bay leaf, clove, parsley, thyme, whole scotch bonnet pepper, salt & pepper to taste. Lower the heat to a light simmer, cover pot and cook for about 50-60 minutes until rice is tender. Remove parsley, thyme, and pepper before serving.
Here is the recipe for the vinegarette for the avocadoes. Cilantro*, 1/8 cup diced red onion, 3 tablespoons of lime juice, 1 clove minced garlic,
* If you don't have cilantro, you can substitute parsley (cilantro is better tho!)

*** I forgot to add the coconut milk! That's what really give the recipe the caribbean flavor. FYI make sure that it's 100% coconut milk - not watered down. Also make sure it's not coconut oil. There's a difference.

girl. mom use to make beans and rice and i hated those nights. i just don't like them. maybe i've never had the GOOD stuff. hubbie likes them but only gets them when we go to a soul food or southern food restaurant. might have to try your recipe.
ohhhhhh, That sounds so good. I am really going to have to try that one next week. I am not really good at making brown rice taste good. Do you think you can give me some tips?
Oooooooh, you are singing my song! We are MAJOR black bean eaters!!!! We usually just eat them with salsa, avocado and sour cream, I can't wait to try this!!!
I am a pikliz freak! I have two jars in my fridge and I eat it with just about everything. I've also turned hubs into one too, rice and beans is our fav meal with some plantains.
Ok. This looks great but I see that there's no salt. Is it naturally in there. My dh doesn't need the extra anyway but just wondering. Making me hungry over here!
@ Lu: Missy the hubster doesn't like beans n rice either. No matter how it's made he just can't eat it. I love it! I've never met a bean or grain I didn't like, yet.
@ Mama: Brown rice cooks differently than regular rice. it takes longer to cook and requires more water. cook it on very low temperatures to prevent burning at the bottom. I like gratin w/ my beans & rice, but with brown rice the gratin can burn really easily so you have to watch the level of heat.

@ Kysha: There is salt in the recipe (sea salt & pepper). Look around line 7-9 i believe. But you know what I forgot one of the most important ingredients COCONUT MILK! yikes! I'll go update that
