The Pedi said if he is genetically predisposed to have cholestrol issues, starting him off with the wrong diet may trigger issues early on. That's hard to swallow when your looking at a bouncing, active, energetic, happy six year old. He doesn't seem like the candidate for cholestrol issues.
The good thing is making the transition to white meat vegetarian won't be hard for me and Lil Man. At one time in my life I was a white meat vegetarian before. I was nearly a complete vegetarian except I did eat fish a few times a month so I couldn't take the full title. Lil Man loves chicken and fish. He also likes quite a few veggies. My struggle is the hubster. He is quite selective when it comes to legumes and likes chicken cooked in only a couple of ways. But that's okay, I'll still cook special meat dishes just for him on the side, because my dou-dou (French for "sweetie") deserves it.
So far everything has been going really well for Lil Man with this new diet. He's even learning to read labels on packaging. The other day he was at his friend's house and his buddy's Mom gave Lil Man a snack. He asked the Mom if it had cholestrol in it because he's allergic to cholestrol. She thought his inquery was so cute and quite advance for his age. Sadly, I had to let her know the poor child has probably been drummed one too many times about cholestrol and that's why he can't even function like a normal kids and just enjoy a snack. ARGH!
The results came back from Lil Man's visit with the specialist. He doesn't have sleep apnea. YAY! Unfortunately, he does need his tonsils removed. Friday, April 17 he is scheduled for that ordeal so I'm a nervous wreck already. He'll miss school all next week. I'm just hoping for the quickest possible recover. I don't like to see my baby suffer. Hmmmmmmph. Boooooowhooooo :(

Awww, poor baby. I never had my tonsils removed but I can just imagine how sore it's going to feel for him. Give him lots of ice cream. Try the soy one too. When I met my hubby he was a big steak & potato's type of guy too. I am vegetarian for 15 years. He never use to eat chicken till one day I made some for him, and showed him how to do it. Now he cooks it and eats fish now too. He reduced his redmeat intake a lot. We hardly bring any home from the grocery store. But when we go out to eat he definately gets his steak because he no longer cooks it at home. He tried for 1 week to become vegetarian but couldn't hang. Which I understand, it's not for everyone. But I'm glad he changed his diet a lot. I think I'm going to let my baby eat meat but not everything, just healthy things. It's going to be weird because I don't cook meat anymore (it's too disgusting for me) so I guess hubby will have to take over that job & I'll do all the other dishes. Did I mention I hate cooking, and am a lazy vegetarian when it comes to cooking, I prefer buying things that are already cooked and I just have to warm it up, like tofurkey-put it in the oven for 1 hr and I'm done.
I'm super stoked your son doesn't have sleep apnea. That's awesome. The tonsils - at least he will be asleep for it and not feel much pain! (sorry,flashback to the circumsision video...:( siiighh...). I'm sure he will be fine. Give him plenty of love and attention! I think you've said he's lactose intolerant so try Keya's soy ice cream suggestion to ease his pain. (BTW - that's funny that he's checking labels at his young age! He's better than I am! LOL)
Anyhoo, I think that's wonderful that you're changing your diet. We also limit our red meat intake(mostly chicken and pork. Not a lot of fish because out of the 4 older people in the house, 1/2 of us don't like fish-I'm one of the offenders but I do like sushi...go figure).
Just yesterday Jason was asking about some veggie only meals for the menu(I prepare a menu for two weeks out for the family) and unfortunately because of the kids, I hate to limit the protien from the meat. But I guess I just need to do a little more research to find good-tasting 'meat' alternatives.

I posted some recipes on my blog for ya, enjoy. Feel free to add anything to those recipes that you think would taste good. I always change up recipes to my liking and family tastes.
The 17th? Thats like tomorrow?! Bless your heart! You family will be in my prayers! I still have my tonsils, but they should have been removed long ago. I'm glad the tests came back ok. Trying to think how much red meat we actually do eat.... not as much as we use to. I have been leaving meat out of our pastas- not because of the no meat thing, but trying to be more frugal. I usually use ground beef, just because I know casseroles that use it. Good luck!

I am controlling my pork intake too. Also my son's. But it's a bit harder for my hub because, like your, he's a meat lover. But we're working on it.

I feel better without red meat in my diet. I haven't had a steak in 10 months. However, I have had about 3 or 4 burgers in the same duration. It’s been all chicken and turkey for me. No fish...I hate it!
